The latest health-conscious café to hit Brisbane is the one and only Pineapple Express. No, not the James Franco film, the superfood café brought to you by five friends with a shared love for tasty, healthy food!
The idea behind the café comes from an interest in healthy food and living, and the team behind the café saw an opportunity to “bring a wholehearted approach to food and beverages while still giving people really tasty food”, according to co-director, Jonathan Ford. “Our slogan is ‘it’s good for your insides’ – everything that we serve will be good for you.”
The café has been in development for a year since the idea came about, and the team behind Pineapple Express has been researching and planning their concept extensively to create the fully-serviced superfood café, including a great deal of detail going into the furnishing, styled by Tu Projects.
“We wanted there to be lots of seating options, shared benches, high bars and low bars both inside and out,” Jonathan says. He added that “the colour palette is based off our logo - white, aqua and yellow - so very fresh and you will see this come through on various design elements throughout the fit out. It is going to be clean and fresh with some fun modern twists.”
Jonathan and the team plan to open Pineapple Express from 5.30am to 8 or 10pm at night, to suit both early risers and night owls looking for a healthy snack, and they’re planning an extensive breakfast and lunch menu, as well as juices, smoothies, and grab’n’go options.
“Paris Strauss, a nutritionist, and Eliza Freeney, a dietician, are consulting on our food menu, making sure our dishes are yum but also good for you and that are our food macros are on par,” he said. Jonathan also told us that the café will have some great twists on traditional dishes, such as protein pancakes, zucchini pasta, naked burgers, and their signature express plate.
The team has big plans for their culinary future, thinking ahead to opening multiple cafes in key locations, having pop-up shops at markets and festivals, and even ideas of a drive-through down the track.
“You will start to see a lot more of us but obviously our flagship cafe will be our major focus.”
Pineapple Express will be opening at Portside Wharf in Brisbane June 1.
